So quinoa is riding the popular tide and everyone, especially Dr. Oz highly recommends this seed for a multitude of reasons, especially its high protein factor amongst other things like balanced amino acids essential for humans. This plant, found in South America was considered sacred food by the Incas… I learnt today that Quinoa is not a grain but a seed! Did you know that? This “pseudo-grain” has found a permanent place in our household in more forms than one. This time in my super-duper fast homemade pizza J
Here’s my recipe
Ingredients for the Pizza base
1 cup of finely ground Quinoa flakes (available at Whole foods as a cereal)
1 pack of Fleichsman's rapid rising yeast
1 pack of Fleichsman's rapid rising yeast
3 cups of multigrain flour (bought from Indian store)
1 tsp of each of these herbs and spices
Oregano
Basil
Thyme
Rosemary
Black whole pepper freshly ground
2 dry Cayenne Peppers crushed
Garlic flakes
Preparation of dough
Knead with warm water and 1 pack of Fleichmman’s rapid rise yeast to correct dough consistency – I think i used about 2 cups – but use water in small amounts after the first cup.
Keep closed for 10 minutes or as long as it takes for you to get the toppings ready
In the meantime let’s get to the toppings: I chopped up green peppers, onions, mushrooms, grated cheeses mozzarella, jalapenos, 1 habanero chili, cheddar and a pizza cheese blend (bought grated from store)
In exactly 1 tsp of olive oil, lightly sautee the toppings and keep - PLEASE NOTE THAT THIS IS THE ONLY TSP OF OIL IN THE ENTIRE RECIPE!
I took a shortcut and used store bought sauce – not the ones that have sugar as their second ingredient listed, but Arrabiata sauce which is at once spicy and sugar-free!
Set oven at 425 degrees
Grease the pans you are using with non-stick olive oil spray
Roll out pizza, spread the sauce and add on some cheese, then toppings and lastly the rest of the cheese
Bake for about 15-20 minutes. The crust turns out adequately crispy yet soft, thin and quite delicious even to eat on its own.

This pizza was out of this world!!!! I had no idea what quinoa was. You know I am not a big fan of all this health food stuff, but I never knew it could taste so great!!! The best pizza I have had in my whole life!!!
