Felt like beeting up the Idlis today ... Got this splendid idea from a fellow-blogger who had made pink pooris. But how about applying this to a healthy food rather than something fired?,http://gayathriscookspot.blogspot.com/2010/12/pink-poori-and-cauliflower-masala.html, Pink is the utmost huge favorite of my little one and it is a task to feed her, esp when she is sick and we all know that idlis are a satvic food that is always recommended esp, in unwell situations. From the color of my blog homepage, you can tell it's my favorite color too :))
My baby loves idlis, but I thought I'd make them extra special and interesting for her by making them pink. It is not food coloring, which is great and for the benefits of beets, please follow this link at your leisure -http://hubpages.com/hub/Health_Benefits_of_Red_Beets
Perfectly Pink Idlis
I am writing the recipe of Idlis for the benefit of those who may read this blog in the hope of finding a recipe for Idlis -- I know most of my blogger friends are probably veterans at this already :-) My mother is and my father in law was and together are/were the best idli makers and i got this recipe from them, at least 10 years ago - haven't changed a thing - Even they experimented with a bunch of other ways they learnt from friends - but I never deviated from the tried and tasted path - until today when i feel kinda in the "experimenting mood"
Here's the outcome -- You rice cake with some color and extra nutrition too :-) The funnest part is that you feel like you are taking a white cloth and using veggie dye on it and seeing the color transforming - Really cool experience! So please try it and take pics and share with me too :-)

Soak
4 cups of Ponni Parboiled rice (Puzhungal arusi)
1 cup urad dal (white halves)
1 handful of poha
Soak separately for 4 to 6 hours
Grind
First wash and strain the rice and the urad
Now, instead of using water for grinding, use the juice of either 2 cans of beets or
If you are using fresh beets, peel and boil the beets - Save the water and use...
Grind both to a nicety - very smooth not gravelly -or nara nara -
Add the salt

Just ground
Batter fully Fermented over night
Make in Idli plates ...
Make Dosais using oil very sparingly on a non-stick pan - be creative with the filling - I must tell you my little one was SO excited about her "pink those -aeee" as she puts it. I put some onion chutney, some molagapodi and some grated cheddar and folded it ...
spread on pan
Add filling of choice - if at all
or with tradtional potato masala :))
fold and serve HOT
Last Word - Yep serve it up with lotsa love :-)
