I am talking cilantro and curry leaves - Kothamali - Kariveppalai rice
This is a really simple and easy rice dish to put out at short notice – Highly satisfying, endlessly aromatic and yummy and completely nutritional, given that they are rich in iron and other anti-oxidants.
Ingredients
½ cup curry leaves
½ cup crush cilantro
2 green chilies
2 red chilies
1 tbsp urad dal
A pinch of asafetida
¼ tsp of tamarind paste
2- 3 tsp of sesame oil
2 tbsp of water
veggies of your choice (optional) I used some peas &carrots and beans (cook like you would a dry curry/subzi and added to the rice)
Get a cup of rice going in the pressure cooker
In a frying pan, add the sesame oil
Add the urad dal, asafetida and chilies and brown slightly
Add the leaves and the let them cook, adding the water. Normally, I just add the salt to the water and pour it over so that the salt gets distributed evenly
Once the leaves start looking cooked, switch off and cool
Grind into chutney and keep
Now take another tsp of oil and slightly mix into the rice.
Keep adding small portions of the rice and the chutney and mix in well.
Temper with mustard seeds, cumin seeds and some cashews (optional)
