See spotty overripe bananas hanging on the stand, one good recipe to consider is banana bread. This recipe has no eggs and is a very easy bread to prepare. This is an eggless recipe and the more I make these kinda baked items, the less I see the need for eggs. Jan’s vegan pointers have helped me tremendously with this. I am not vegan at all – we can hardly live without our dairy products, the cheese, buttermilk or even plain old milk- no way siree! But, eggs are a whole other matter! My next foray into baking will be to try sugarless recipes – for the sake of my sister and many others in my family.
Preparation
I made two different kinds of banana bread – One that was purely bananas and one with dates and walnuts. Both turned out well and here I go with my recipe
Ingredients
6 overripe bananas
3 cups of whole wheat flour
1 cup of turbinado cane sugar
2 tsp baking soda
1tsp pure orange extract
½ cup of milk
4 tbsp of yogurt
6 tbsp of oil (I used corn oil)
½ tsp of salt
6-8 pieces of dates chopped
10-12 walnuts chopped
Preparation
Preheat oven to 350 F (180 C)
In a big bowl, sift the flour
Add the baking soda, salt and mix well into the flour
In a bowl, mix the milk, buttermilk and oil.
Mash the bananas and add along with the sugar to the milk mix and whisk contents gently
Now add the orange extract quickly turn in with the other ingredients
Now make a hole in the middle of the flour and add the mix and whisk until all the ingredients are well blended
Now you can add the chopped dates and walnuts and mix into the batter in half the batter or the entire batter as per your desire
Pour into two greased bread pans
Cook for about 40-45 minutes or longer – do the toothpick test to ensure that it is baked fully.
Enjoy warm.

This is definitely one recipe I shall try; looks yummy! Welcome to the world of eggless baking; eggs are simply not necessary, as you rightly said.
